Crispy Cabbage and Egg Pancakes

Prep the cabbage: Place the shredded cabbage in a large bowl. Add salt and let sit for 5 minutes to soften slightly.

Mix the batter: Add chopped green onion, chili, black pepper, eggs, and cornstarch to the cabbage. Mix until everything is well combined.

Cook: Heat oil in a non-stick frying pan over medium heat. Scoop a portion of the mixture into the pan and flatten it gently.

Fry: Cook each side for 2–3 minutes or until golden and crispy. Flip carefully.

Serve: Serve hot with a dipping sauce like soy sauce or chili garlic sauce.
