Comfort Classic: Weeknight Shepherd’s Pie

Boil potatoes in salted water until fork-tender, about 15 minutes. Drain, mash with milk, butter, salt, and pepper. Set aside.

Make the Meat Filling:
In a skillet, sauté onion, carrots, and celery in a bit of oil until soft (5–6 minutes). Add garlic and cook for 1 minute more.

Add the Beef:
Add ground beef and cook until browned. Drain excess fat. Stir in tomato paste, Worcestershire sauce, oregano, thyme, salt, and pepper.

Simmer:
Pour in beef broth. Simmer for 10–12 minutes until slightly thickened.

Assemble:
Preheat oven to 400°F (200°C). Spread meat mixture in a baking dish. Top evenly with mashed potatoes. Smooth with a spatula.

Bake:
Bake uncovered for 20–25 minutes until golden on top. Let rest 5 minutes before serving.
