Preheat the oven to 180°C (356°F). Line a baking tray with parchment paper.
In a pan, heat olive oil and sauté mushrooms, carrot, and bell pepper until soft. Let cool.
In a large bowl, combine minced meat, onion, garlic, egg, breadcrumbs, salt, pepper, paprika, and herbs. Mix well.
Flatten the meat mixture on a sheet of baking paper into a rectangle.
Spread the vegetable mixture in the center and lay cheese strips on top.
Carefully roll the meat over the filling to form a loaf. Seal the edges.
Transfer to the tray and bake for 45–55 minutes until golden brown and cooked through.
Rest for 5 minutes before slicing.
