Better Than Pizza: Cheesy Vegetable Potato Bake

Preheat the oven to 190°C (375°F) and grease a baking dish with butter or olive oil.

In a large bowl, beat the eggs with milk. Add salt and pepper.

Stir in the flour gradually until a smooth, thick batter forms.

Mix in grated potatoes, carrot, onion, bell pepper, and tomatoes.

Add half of the cheeses and mix everything well.

Pour the mixture into the prepared dish and smooth the surface.

Sprinkle the top with remaining Parmesan and mozzarella.

Drizzle with olive oil and bake for 35–40 minutes until golden and crispy.

Garnish with fresh spring onions before serving.
