Apricot Bliss: 5-Minute Jam Cake Wonder

Preheat your oven to 180°C (350°F). Line a small baking tin with parchment paper or grease it lightly.

In a bowl, beat the eggs, salt, and vanilla sugar until foamy.

Add the sugar and continue beating until the mixture is pale and fluffy.

Slowly mix in the oil.

Sift in the flour and baking powder, then fold gently until combined.

Gently fold in the apricot jam.

Pour the batter into the prepared tin and bake for 25–30 minutes, or until a toothpick comes out clean.

Let cool slightly, and optionally spread extra apricot jam on top before serving.
