Preheat a non-stick pan or sandwich press over medium heat.
Flatten each slice of bread slightly with a rolling pin or hand.
Place 2 slices of cheese and 1 slice of sausage on each piece of bread.
Fold the bread over or roll it up tightly like a pocket.
In a bowl, whisk the eggs and dip each bread roll into the egg mixture.
Cook the rolls in the pan for 2–3 minutes per side, until golden and crispy.
Serve warm with your favorite dip or fresh fruit.
