15-Minute Garlic Herb Pork Loin Roast

Prep the Pork: Pat the pork loin dry with paper towels. Score the top fat layer lightly.

Season: In a small bowl, mix garlic powder, onion powder, thyme, rosemary, paprika, salt, and pepper. Rub the spice mix all over the pork. Drizzle with olive oil and massage it into the meat.

Sear: Heat a large skillet over medium-high heat. Add a bit of olive oil and sear the pork loin on all sides until golden (about 3–4 minutes per side).

Cook: Cover and lower heat to medium. Continue cooking for 7–10 more minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).

Rest: Transfer the pork to a cutting board. Let it rest, covered loosely with foil, for 5–10 minutes before slicing.
