Preheat your oven to 375°F (190°C). Grease a baking dish.
Grate the zucchini and place in a clean towel. Squeeze out excess moisture.
In a large bowl, beat the eggs. Add the grated zucchini, chopped onion, flour, Parmesan, breadcrumbs, yeast or baking powder, salt, pepper, basil, and olive oil. Mix well.
Pour the mixture into the greased baking dish. Smooth the top and sprinkle with the extra 2 tablespoons of Parmesan.
Bake for 35–40 minutes, or until golden and set.
Let cool slightly before slicing and serving.
