Lightly grease a muffin tin.
Line each muffin cup with zucchini slices to form a base and sides.
In a bowl, whisk together eggs, milk, salt, pepper, and cheese.
Pour the egg mixture into each zucchini-lined muffin cup.
Bake for 20–25 minutes or until the tops are golden and eggs are set.
Let cool slightly before removing from the tin.
