Preheat your oven to 180°C (350°F). Line a loaf pan or cake tin with parchment paper or grease it lightly.
Prepare the Fruit and Veggies:
Grate the apples and carrot. Mash the banana with a fork.
Mix Wet Ingredients:
In a large bowl, combine the mashed banana, grated apple, carrot, eggs, water, sweetener, and vanilla extract.
Add Dry Ingredients:
Stir in the oatmeal and baking powder until well combined. Let the mixture sit for 5–10 minutes to absorb moisture.
Bake:
Pour the mixture into the prepared pan and smooth the top.
Bake for 35–45 minutes or until a toothpick inserted in the center comes out clean.
Cool & Serve:
Let the cake cool before slicing. Serve as-is or topped with a spoonful of yogurt or nut butter.
