Boil potatoes in salted water until fork-tender (about 15–20 minutes).
Drain and mash with butter and warm milk until smooth.
Season with salt, pepper, and optional garlic powder or chives.
Egg Gratin:
Preheat the oven to 180°C (350°F).
In a pan, melt butter and sauté the chopped onion until soft.
In a bowl, whisk together eggs, milk/cream, salt, pepper, and nutmeg.
Add sautéed onions and half the cheese to the egg mixture.
Pour into a greased baking dish, sprinkle remaining cheese on top.
Bake for 20–25 minutes or until the top is golden and set.
