Prep the chicken: Rinse and pat dry the chicken thighs. Season with salt and pepper.
Sauté aromatics: Heat oil in a large skillet or pot over medium heat. Sauté the ginger, garlic, and green chilies for 2–3 minutes until fragrant.
Sear the chicken: Add chicken thighs to the pan and cook for 3–4 minutes per side until lightly browned.
Add liquids and spices: Pour in the Coca-Cola, soy sauce, vinegar, and add star anise and chili flakes. Stir to combine.
Simmer: Cover and let simmer over medium-low heat for 30–35 minutes, occasionally turning the chicken, until the sauce thickens into a glossy glaze.
Finish & serve: Once the sauce is thick and sticky, remove from heat. Serve hot with steamed rice or noodles.
