Heat olive oil or butter in a skillet over medium heat.
Sauté the chopped onion until translucent.
Add the spinach and cook until wilted, about 2 minutes.
In a bowl, beat the eggs with salt and pepper.
Pour the eggs into the pan over the spinach and onions.
Cook for 1–2 minutes, then sprinkle cheese on top.
Cover and cook for another 2–3 minutes until eggs are set and cheese is melted.
Fold the omelette and serve warm.
