Slow-Cooked Beef & Barley Comfort Soup

Optional Browning: In a skillet, heat olive oil and brown beef cubes for extra flavor.

Layer in Crock Pot: Add beef, carrots, celery, onion, mushrooms, and garlic to the crock pot.

Add Barley and Seasoning: Stir in barley, tomato paste, thyme, pepper, salt, and bay leaf.

Add Broth: Pour beef broth over everything.

Cook: Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef and barley are tender.

Finish and Serve: Remove bay leaf, stir, and serve hot.
