In a pot, bring the water to a gentle boil.
Add grated ginger and cinnamon. Simmer for 5 minutes.
Remove from heat and let it cool slightly.
Add lemon juice and honey (if using). Stir well.
Pour into a glass bottle or jar. Add mint leaves if desired.
Drink warm in the morning on an empty stomach, and optionally in the evening.
