Season steaks generously with salt and black pepper.
In a large skillet over medium-high heat, add olive oil.
Sear the steaks for 3–4 minutes per side (depending on doneness). Remove and rest.
In the same skillet, add baby potatoes and cook until golden and tender, about 10–12 minutes. Add more oil if needed.
Reduce heat, add butter and minced garlic. Stir until fragrant (1–2 minutes).
Return the steaks to the skillet and spoon garlic butter over them.
Sprinkle with parsley before serving, if using.
