Royal Mutton Gravy: A Bold and Aromatic Feast

Heat oil or ghee in a large pot. Add cumin seeds, cloves, cinnamon, and cardamoms. Sauté for 30 seconds.

Add onions and cook until golden brown.

Stir in ginger-garlic paste and green chilies. Cook for 1–2 minutes.

Add tomatoes, cook until soft and oil separates.

Mix in yogurt, turmeric, chili powder, coriander powder, and salt. Stir well.

Add mutton pieces and mix until well coated. Cook for 5–7 minutes on medium heat.

Add water, cover, and simmer for 45–60 minutes (or until mutton is tender).

Garnish with fresh coriander and serve hot.
