Golden Potato Egg Bites: The Easiest Appetizer Ever

Peel and grate the potatoes. Squeeze out excess water using a clean towel or cheesecloth.

Melt butter in a pan and lightly sauté the chopped onion until soft and golden.

In a large bowl, combine the grated potatoes, sautéed onions, eggs, salt, and parsley. Mix well.

Heat a lightly greased non-stick pan and drop spoonfuls of the mixture into it. Flatten slightly.

Cook for 3–4 minutes per side on medium heat, or until golden brown and cooked through.

Serve warm with your favorite dip or sauce.
