In a large bowl, combine the peanut butter, softened butter, and vanilla extract.
Gradually mix in the powdered sugar until a thick dough forms.
Roll into 1-inch balls and place on a lined baking sheet.
Chill in the freezer for 20–30 minutes.
Melt chocolate chips (and coconut oil if using) in a heatproof bowl over simmering water or in the microwave in short bursts.
Dip each ball in melted chocolate using a fork or toothpick.
Return to the baking sheet and refrigerate until the chocolate sets.
