Grate the potatoes and squeeze out excess water using a kitchen towel.
In a bowl, combine grated potatoes, cheese, parsley, eggs, salt, and pepper. Mix well until the mixture holds together.
Take a handful of mixture and flatten it into a rectangle on a sheet of parchment paper or cling film.
Roll it up tightly into a log shape using the paper to assist. Repeat with the remaining mixture.
Optional: Roll in breadcrumbs for a crunchier finish.
Heat oil or butter in a pan over medium heat. Fry the rolls until golden brown on all sides. Alternatively, bake at 200°C (390°F) for 25–30 minutes, turning once halfway.
