Cook Orzo: Boil orzo according to package instructions, using chicken broth instead of water. Drain and set aside.
Prepare Chicken: Season chicken with salt and pepper. In a skillet, heat olive oil and cook chicken for 5–6 minutes per side until cooked through. Remove and rest.
Sauté Veggies: In the same pan, add a bit more olive oil if needed. Sauté garlic for 1 minute, then add tomatoes and cook until soft (3–4 minutes).
Mix: Add cooked orzo and half the pesto. Stir well to coat.
Serve: Slice chicken and place on top of orzo. Drizzle with remaining pesto. Garnish with Parmesan and fresh basil if desired.
