Prepare the Potatoes: Preheat your oven to 200°C (390°F). Toss diced potatoes in olive oil, salt, pepper, and Provencal herbs. Spread in a greased baking dish and roast for 20–25 minutes.
Cook the Sausage & Veggies: In a large pan, heat 2 tbsp olive oil. Add sausage slices and cook until browned. Remove and set aside.
In the same pan, sauté onion and garlic until soft. Add bell pepper and zucchini. Cook for 5–7 minutes.
Stir in diced tomatoes and smoked paprika. Season with salt and pepper. Simmer for 5 minutes.
Assemble the Casserole: Remove the potatoes from the oven. Pour the sausage and vegetable mixture over the roasted potatoes and mix gently.
Return to the oven and bake for another 15–20 minutes.
Garnish with fresh parsley before serving.
