In a heavy-bottomed saucepan, combine sugar and water over medium heat. Stir gently just to combine, then stop stirring and let the sugar dissolve and turn golden amber (5–8 mins).
Add Cream & Vanilla:
Carefully pour in the cream (it will bubble), whisking constantly. Add vanilla and salt. Stir until smooth. Let it cool to room temperature.
Whip the Butter:
In a mixing bowl, beat the butter until light and fluffy (about 2–3 minutes).
Combine:
Add cooled caramel to the whipped butter. Beat until incorporated.
Add Powdered Sugar:
Gradually add powdered sugar and beat until smooth and fluffy. Adjust consistency with more sugar or a splash of cream if needed.
