Ingredients
For the Base:
1 cup (90g) gluten-free rolled oats
½ cup (40g) unsweetened shredded coconut
½ cup (75g) Medjool dates, pitted
Pinch of salt
For the Lime Coconut Topping:
1 cup (140g) raw cashews, soaked 4+ hours or boiled 10 mins
¼ cup (60ml) full-fat coconut cream (top of chilled can)
¼ cup (60ml) maple syrup or agave nectar
¼ cup (60ml) fresh lime juice
Zest of 1 lime
