Preheat the oven to 200°C (400°F).
Wash and dry the potatoes thoroughly. Cut them into wedges or thick slices.
In a large bowl, toss the potatoes with olive oil, Parmesan cheese, garlic powder, rosemary, salt, and pepper.
Spread the potatoes on a baking sheet lined with parchment paper in a single layer.
Bake for 35–40 minutes, flipping once halfway, until golden and crispy.
Serve hot, optionally with a dipping sauce or sour cream.
