Combine the blueberries, water, and lemon juice in a saucepan.

Simmer over medium heat for 5–8 minutes, stirring occasionally, until the berries burst. Mash some with a fork for a jam-like texture.

Remove from heat and stir in chia seeds and optional flavors.

Let the mixture sit for 15–20 minutes, stirring occasionally as it thickens.
