Lentil Power Bread – A Gluten-Free, Sugar-Free, Yeast-Free Wonder

Soak the Lentils
Soak the lentils in water for at least 3 hours or overnight. Drain and rinse.

Prepare the Mixture
In a blender or food processor, combine the soaked lentils, ground rice, flaxseed flour, olive oil, and water. Blend until smooth but thick.

Add Texture and Flavor
Stir in chopped apple and pumpkin seeds by hand. You can also add a pinch of salt or spices like cinnamon for added taste.

Bake
Preheat the oven to 180°C (350°F). Pour the batter into a greased or parchment-lined loaf pan. Bake for 35–40 minutes or until golden brown and firm to the touch.

Cool and Slice
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice when completely cool.
