Healing Garden Vegetable Soup: A Soothing Bowl for Body & Soul

Heat olive oil in a large pot over medium heat. Add onion, leeks, celery, and garlic. Cook for 4–5 minutes until softened.

2️⃣ Add Vegetables:
Stir in carrot, red pepper, zucchini, and potatoes. Cook for another 5 minutes, stirring occasionally.

3️⃣ Season & Simmer:
Add chili (if using), thyme, turmeric, salt, and pepper. Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until all vegetables are tender.

4️⃣ Finish & Serve:
Stir in lemon juice. Garnish with fresh parsley. Serve warm with crusty bread or enjoy on its own.
