Golden Baked Eggplant Slices: A No-Fry Crispy Classic

Set your oven to 200°C (390°F). Line a baking tray with parchment paper.

2️⃣ Salt and Drain the Eggplant:
Lightly salt both sides of the eggplant slices and let them sit for 10–15 minutes to draw out bitterness. Pat dry with a paper towel.

3️⃣ Season the Breadcrumbs:
Mix breadcrumbs with garlic powder, smoked paprika, salt, and pepper.

4️⃣ Dip and Coat:
Dip each slice into the beaten eggs, then press into the seasoned breadcrumbs. Lay them flat on the baking tray.

5️⃣ Bake:
Bake for 15 minutes, flip the slices, top with cheese, and bake another 10 minutes or until golden and bubbly.
