For the Grilled Chicken:

1 chicken breast, butterflied or sliced in half

1 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp paprika

1/2 tsp Italian seasoning or oregano

Salt & pepper to taste

Juice of 1/2 lemon

For the Rice:

1/2 cup white basmati or jasmine rice

1 cup water

Pinch of salt

For the Salad:

1/2 avocado, sliced

4–5 cherry tomatoes, halved
