Prepare the chicken: If using a whole chicken, butterfly it by removing the backbone and flattening it. If using drumsticks, score the meat for better flavor penetration.
Make the marinade: Mix olive oil, garlic, dried onions, pepper, paprika, salt, and lemon juice.
Marinate the chicken: Rub the mixture all over the chicken. Cover and marinate for at least 1 hour, preferably overnight in the fridge.
Cook the chicken:
Grill method: Preheat grill to medium-high heat. Grill chicken for 20–25 minutes, turning occasionally.
Oven method: Preheat oven to 200°C (400°F). Place chicken on a baking tray and roast for 35–45 minutes until golden and fully cooked.
Optional step: Broil for 2–3 minutes for a crispier skin.
