Preheat oven to 375°F (190°C).
Roll out puff pastry sheets on a baking tray lined with parchment paper. Lightly sprinkle the crust edges with 1 tsp sugar.
In a skillet, melt butter over medium heat. Add sliced apples and 2 tbsp sugar. Cook for 5–7 minutes until slightly softened and caramelized. Set aside to cool.
Whisk the yogurt until smooth and creamy. Optionally, sweeten with a little honey or vanilla.
Spread a thin layer of yogurt over the puff pastry, leaving a 1-inch border around the edges.
Arrange caramelized apples over the yogurt layer.
Fold edges slightly inward if you prefer a rustic look.
Bake for 25–30 minutes, or until the pastry is golden and crisp.
Cool slightly before slicing. Serve warm or chilled.
