Prep the tofu: Drain and pat dry the tofu. Mash it in a bowl until crumbly.
Mix ingredients: Add the green onion, carrot, flour, nutritional yeast (if using), garlic powder, salt, and pepper. Mix into a sticky dough.
Shape the toast: Take a handful of the mixture and form into flat rectangles or circles, about 1 cm thick.
Cook: Heat oil in a non-stick skillet over medium heat. Cook the tofu "toast" for 3β4 minutes per side until golden brown and crispy.
Serve: Serve hot with your favorite toppings or dips.
