Crispy Potato & Egg Breakfast Nests – Quick Morning Delight

Preheat your oven to 200°C (400°F).

Grate the potatoes and squeeze out excess moisture using a clean towel or paper towel.

In a bowl, mix grated potatoes with a pinch of salt and pepper.

Grease a muffin tin with olive oil or butter. Press the potato mixture into 4 cups of the tin, creating a "nest" shape.

Bake the nests for 15 minutes, or until the edges are golden brown.

Remove from oven, sprinkle bacon and cheese into each nest.

Crack one egg over two of the nests (or divide the two eggs between four if you want less egg per portion).

Return to the oven and bake another 8–10 minutes, or until the egg whites are set but yolks are still soft (or to your preferred doneness).

Let cool slightly before removing from the tin.
