Trim the crusts off the sandwich bread for a neat edge.
Place slices of mozzarella between two pieces of bread to form a sandwich.
In a shallow bowl, whisk eggs, milk, salt, pepper, and Parmesan if using.
Dip each sandwich fully into the egg mixture, letting it soak slightly.
Coat with breadcrumbs on all sides for a crispy finish.
Place on the baking tray, drizzle lightly with olive oil or spray with cooking oil.
Bake for 15–18 minutes, flipping halfway, until golden brown and crispy.
