Boil water with salt and cook the pasta according to package instructions. Drain and set aside, saving ¼ cup of pasta water.

2️⃣ Sauté the Chicken:
Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt, pepper, and herbs. Cook until golden and fully done. Remove and set aside.

3️⃣ Make the Sauce:
In the same pan, sauté the red onion for 2 minutes, then add garlic and sun-dried tomatoes. Cook until fragrant. Pour in the cream and simmer gently.

4️⃣ Add Cheese and Greens:
Stir in Parmesan, then toss in the spinach. Let it wilt into the sauce.

5️⃣ Combine:
Return the chicken to the pan. Add cooked pasta and a splash of reserved pasta water to loosen the sauce. Mix everything well.

Plate the pasta hot and sprinkle with extra Parmesan or chili flakes if desired.
