Preheat oven to 180°C (350°F).
Grate the zucchini and squeeze out as much liquid as possible using a clean towel or cheesecloth.
In a bowl, mix grated zucchini with salt, garlic powder, pepper, coconut flour, and eggs.
Stir in shredded cheese and optional Parmesan.
Pour mixture into a greased baking dish and flatten evenly.
Bake for 25–30 minutes, until golden and set.
Let cool slightly before slicing and serving.
