Preheat your oven to 200°C (400°F).
Pat the monkfish fillets dry and place them in a baking dish.
In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, thyme (or rosemary), salt, and pepper.
Pour the mixture over the fillets and gently rub it in.
Optional: Add cherry tomatoes or sliced fennel around the fish.
Bake for 18–22 minutes, or until the fish is opaque and flakes easily with a fork.
Let rest for 2 minutes before serving.
