Combine the mustard seeds, vinegar, and water in a glass bowl. Cover and let soak at room temperature for at least 12 hours (overnight).
After soaking, pour the mixture into a blender or food processor.
Add salt, turmeric, and any optional spices. Blend until you reach your desired consistency — chunky or smooth.
Taste and adjust with more honey, salt, or spices if needed.
Transfer the mustard to a clean glass jar. Seal tightly.
Refrigerate for at least 2 days before using to allow flavors to develop fully.
