In a large skillet over medium heat, sauté the chopped onion until translucent.

Add the minced garlic and cook for another minute.

Stir in the diced yellow pepper and cook until softened.

Add the minced meat, breaking it up with a spoon. Cook until browned.

Stir in the tomato paste, thyme, paprika, and season with salt and pepper to taste.

Let it simmer for 5–7 minutes to develop deep flavor.

Remove from heat, stir in the chopped parsley, and let the filling cool slightly.

Prepare the Potato Layer: (If using mashed potatoes)

Spread a layer of mashed potatoes (about 1–1.5 cm thick) on a sheet of parchment paper. (If using grated potatoes, a different method can be provided.)

Assemble the Roll:

Spread the meat filling evenly over the potato layer.

Sprinkle the shredded mozzarella over the top.

Carefully roll up the potato layer using the parchment paper to help guide it into a tight log.

Bake:

Preheat your oven to 200°C (400°F).

Place the roll on a baking sheet lined with parchment paper.

Bake for 20–25 minutes until heated through and lightly golden on top.

Optionally, sprinkle extra cheese on top during the last 5 minutes for a cheesy crust.

Serve:

Slice carefully and serve warm, ideally with a crisp green salad or steamed veggies.
