Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
Cream Butter and Sugars: In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
Add Vanilla and Eggs: Mix in the vanilla extract, followed by the eggs, one at a time.
Combine Everything: Gradually stir the dry ingredients into the wet mixture until just combined. Gently fold in the chocolate chips.
Scoop and Bake: Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 10–12 minutes or until the edges are golden and the centers are slightly soft.
Cool Completely: Allow the cookies to cool on the baking sheet for a few minutes before transferring to wire racks.
Assemble the Sandwiches: Place a generous scoop of ice cream on the flat side of one cookie and sandwich it with another cookie.
Freeze Before Serving: Arrange the sandwiches on a tray and freeze for about 30 minutes to firm up.
