Smoky Grilled Portobello Mushrooms: A Simple and Satisfying Plant-Based Favorite

Gently wipe the Portobello caps clean with a damp cloth. Remove the stems and, if desired, scrape out the gills for a smoother texture.

Mix the Marinade:
In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, soy sauce, oregano, smoked paprika, salt, and pepper.

Marinate the Mushrooms:
Brush the mushroom caps generously on both sides with the marinade. Let them sit for at least 15–20 minutes to absorb the flavors.

Preheat the Grill:
Heat your grill to medium-high. If using a grill pan indoors, preheat it over medium heat.

Grill the Mushrooms:
Place the mushrooms gill-side down first. Grill for about 5–7 minutes per side, brushing with more marinade if needed, until they are tender and have nice char marks.

Serve:
Garnish with chopped parsley or basil and serve hot. Enjoy them as a main dish, burger substitute, or hearty side!
