Slice all the vegetables and chicken into uniform strips to ensure even cooking.
Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
Add the chicken strips, season lightly with salt and pepper, and stir-fry until fully cooked (about 5–7 minutes). Remove and set aside.
Stir Fry the Vegetables
In the same pan, add another tablespoon of oil.
Sauté the garlic and ginger for about 30 seconds until fragrant.
Add the carrots first (they take the longest to cook), then after 2 minutes, add the peppers and zucchini. Stir-fry for another 3–5 minutes, keeping the vegetables crisp-tender.
Combine and Season
Return the chicken to the pan.
Add soy sauce and oyster sauce (if using), tossing everything together to coat well.
Cook for another 2 minutes, allowing the flavors to meld.
Garnish and Serve
Sprinkle with sesame seeds and chopped spring onions if desired. Serve hot over rice or noodles!
