Preheat your oven to 375°F (190°C).
Lightly grease a 6-cup muffin tin or line with silicone liners.
Mix the Ingredients:
In a large bowl, whisk together the eggs and milk until smooth.
Stir in the chopped spinach, crumbled feta, salt, pepper, and any optional seasonings.
Fill the Muffin Cups:
Pour the egg mixture evenly into the prepared muffin cups, filling about 3/4 full.
Bake:
Bake for 18–20 minutes or until the egg muffins are set and lightly golden on top.
Cool and Serve:
Let cool for a few minutes before removing from the tin. Serve warm or at room temperature.
