In a bowl, combine the diced apples with sugar, cinnamon, and lemon juice.
Add the crumbled ladyfingers to the apple mixture and stir until well combined. The ladyfingers will absorb the apple juices and create a soft, flavorful filling.
2. Prepare the Puff Pastry:
Roll out the puff pastry on a lightly floured surface.
Cut it into squares (about 4x4 inches).
3. Assemble the Bundles:
Place a spoonful of the apple and ladyfinger filling in the center of each puff pastry square.
Bring the corners of the pastry together at the top and pinch to seal, forming small bundles (fagottini).
Place the bundles on a baking sheet lined with parchment paper.
4. Bake:
Brush each bundle with a beaten egg for a golden finish.
Bake in a preheated oven at 375°F (190°C) for about 20–25 minutes, or until puffed and golden brown.
5. Serve:
Allow the bundles to cool slightly, then dust them with powdered sugar before serving.
