Hearty Smoked Sausage and Potato Bake with Sour Cream and Cheese

Preheat your oven to 180°C (350°F).

Peel the potatoes and cut them into thin slices. Boil them in salted water for about 5–7 minutes until slightly soft but not fully cooked. Drain and set aside.

In a bowl, beat the eggs with the sour cream. Season lightly with salt and pepper.

Slice the smoked sausages and the cherry tomatoes. Chop the spring onions finely.

Grease a baking dish with a little vegetable oil.

Layer the bottom with half of the potato slices.

Spread half of the sausage, tomatoes, and spring onions over the potatoes.

Repeat with the rest of the potatoes and sausage mixture.

Pour the egg and sour cream mixture evenly over the top.

Grate the hard cheese and sprinkle it generously over everything.

Bake for 25 to 30 minutes until the top is golden and the cheese is bubbling.
