In a large bowl, mix the salt, water, and flour until a smooth dough forms. Knead well for about 5–7 minutes until elastic.
Cover the dough and let it rest for about 30 minutes.
Meanwhile, prepare the filling by sautéing the chopped onion in a little oil until soft. Add the chopped spinach and cook until wilted. Season with salt and pepper. Let cool.
Divide the dough into equal balls (4–6 portions). Roll out each ball very thinly on a floured surface.
Brush the surface with melted butter and a little oil mixture.
Spread a spoonful of the spinach and onion filling across the dough.
Roll or fold the dough into a pastry shape (spiral, triangle, or layer).
Place pastries on a greased baking tray. Brush the tops with more butter.
Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, or until golden brown and crispy.
