Place the lobster chunks in a bowl with the buttermilk. Let them soak for 15–30 minutes to enhance tenderness and flavor.
Prepare the Coating
In a shallow bowl, combine the flour, cornmeal, paprika, cayenne pepper (if using), salt, and black pepper.
Heat the Oil
In a large skillet or deep frying pan, heat about 1–2 inches (2.5–5 cm) of vegetable oil to 350°F (175°C).
Coat and Fry the Lobster
Remove the lobster from the buttermilk, allowing excess to drip off.
