Preheat: Heat your mini waffle maker or standard waffle iron to medium heat.
Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
Mix Wet Ingredients: In a separate bowl, beat the buttermilk, eggs, and melted butter until well combined.
Combine: Gently fold the wet ingredients into the dry mixture until just combined — don’t overmix!
Add Cheese: Stir the shredded smoked gouda evenly into the batter.
