Set your oven to 350°F (175°C).
Prepare the Dough Mixture:
Cut the biscuit dough into smaller pieces.
In a large bowl, combine the biscuit pieces with shredded cheddar, Colby Monterey Jack cheese, and drained green chile peppers.
Season with Garlic Butter:
Melt the butter and stir in the minced garlic.
Drizzle the garlic butter over the biscuit mixture and gently toss until everything is evenly coated.
Bake:
Grease a 9 x 13-inch baking dish.
Spread the biscuit mixture evenly in the dish.
Bake for 25–30 minutes, or until the top is golden brown and the cheese is bubbling.
Serve:
Let it stand for 10 minutes before serving.
Garnish with chopped parsley if desired. Serve hot.
